Start your day with avocado toast for breakfast! There's just something about smashed avocado on toast that I love, and there are so many ways to make it! Here are six ideas for mixing up your toast routine. All of these recipes are vegan and easy to make.

Avocado Toast
I'm not quite sure how it happened, but a few years ago, avocado toast became quite the culinary trend. And we're not talking guacamole on bread here. Morning toast has become a form of self-expression, and it's being loaded down with all manner of fruits, veggies, and condiments. Just do a search for #avocadotoast on Instagram, and you'll see what I'm talking about.

It's pretty much a no-brainer that this breakfast dish has become so popular – avocados and toast are both pretty delicious on their own, so why not combine them? I like to sprinkle my toast with nutritional yeast, spread it with hummus, and drizzle it with hot sauce. Today I'm sharing some of my favorite ways to make it.

Contrary to what certain millionaire real estate moguls might tell you, none of these toast recipes will break the bank – you'll still have plenty of money left over to buy a house.

Cheesy Avocado Toast
Cashew Cheese Sauce, Hot Sauce, Hemp Seeds, and Nutritional Yeast
This is my favorite way to make toast. It's made with my Go-To Cashew Cheese Sauce, a drizzle hot sauce (Cholula is my hot sauce of choice), hemp seeds, and a sprinkle of nutritional yeast.

Hummus and Hot Sauce Avocado Toast
Hummus, Scallions, Sesame Seeds, and Hot Sauce
Hot sauce and hummus are a match made in heaven, so why not add them to your toast? This toast is topped with mashed avocado, store-bought hummus, hot sauce, sliced scallions and a sprinkling of black and white sesame seeds. You can use homemade hummus, if you're up for the challenge.

Feta and Olive Avocado Toast
Tofu Feta, Olives, Tahini Dressing, and Red Pepper Flakes
Feta, tahini and avocado are a blissful combination for me. This toast is made with Tofu Feta, a drizzle of Lemony Tahini Dressing, slices of kalamata olives, and a dash of red pepper flakes. I like to use sprouted grain bread for this one. If you prefer store-bought feta, try Violife or Follow Your Heart.

Pesto Avocado Toast
Pesto, Tahini, Olives, and Scallions
Avocado with tahini and olives is a favorite combo of mine, so I like to play with different ways to serve them. This bread is topped with Spinach Pesto, sliced olives, scallions, and Lemony Tahini Dressing. If you don't feel like making your own pesto, try Gotham Greens Vegan Pesto.

Tomato and Ricotta Avocado Toast
Tomato Slices, Cashew Ricotta, Nooch, Balsamic Vinegar
If you'd like to add a little Italian flair to your breakfast, try this toast, which features Cashew Ricotta, tomato slices, fresh basil, and a dusting of nutritional yeast. If you'd like to use store-bought ricotta, Kite Hill's is delish.

Strawberry and Ricotta Toast
Strawberries, Cashew Ricotta, and Balsamic Vinegar
When I'm in the mood for a little something sweet in the morning, I like to add fresh fruit to my breakfast. This rustic whole wheat toast is topped with avocado slices, Cashew Ricotta, fresh strawberry slices, and a splash of fig balsamic vinegar. If you haven't tried strawberries and balsamic vinegar together, you really must!
